A moist Bundt cake flavored with fresh lemon and ginger.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup plain yogurt
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon ground ginger
- 1/2 teaspoon fresh grated ginger
- 1/4 cup milk
- For Glaze: 1 cup powdered sugar, 2 tablespoons lemon juice
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 10-cup Bundt pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- Stir in the yogurt, lemon juice, lemon zest, ground ginger, and grated ginger until just combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined; do not overmix.
- Pour the batter into the prepared Bundt pan.
- Bake for 40 to 45 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- While the cake cools, prepare the glaze: Whisk together the powdered sugar and 2 tablespoons of lemon juice until smooth.
- Drizzle the glaze over the cooled cake.
Notes
- You can substitute dried ground ginger for fresh grated ginger if necessary, but fresh provides a stronger flavor.
- Store leftover cake covered at room temperature for up to three days.
