- 2 pounds red potatoes, cut into 1-inch pieces
- 8 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons chopped fresh chives
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.
- Drain potatoes and let cool slightly.
- In a large bowl, combine potatoes, bacon, cheddar cheese, mayonnaise, sour cream, chives, Dijon mustard, salt, and pepper.
- Gently stir to combine.
- Serve immediately or refrigerate for later.
