A refreshing and simple lychee sorbet recipe.
Ingredients

- 2 cups fresh lychees, peeled and pitted
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 tablespoon lemon juice
Instructions
- Combine sugar and water in a small saucepan. Heat over medium heat, stirring until sugar dissolves. Let the syrup cool.
- Puree the peeled and pitted lychees in a blender or food processor until smooth.
- Stir the cooled sugar syrup and lemon juice into the lychee puree.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the sorbet to an airtight container and freeze for at least 2 hours before serving.
Notes
- For a smoother texture, you can strain the lychee puree before mixing it with the syrup.
- If you don’t have an ice cream maker, pour the mixture into a shallow freezer-safe container. Freeze, stirring vigorously with a fork every 30 minutes for about 3-4 hours, until firm.
