A simple lemon cobbler with a magical self-saucing layer.
Ingredients

- 1 1/2 cups granulated sugar, divided
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1/4 cup butter, melted
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup boiling water
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, whisk together 1 cup sugar, flour, baking powder, and salt.
- Add milk, melted butter, lemon juice, and lemon zest. Mix until combined.
- Pour batter into an ungreased 8×8 inch baking dish.
- Sprinkle remaining 1/2 cup sugar evenly over the batter.
- Carefully pour boiling water over the sugar layer. Do not stir.
- Bake for 30-35 minutes, or until the top is golden brown and the sauce has formed underneath.
- Let cool slightly before serving.
Notes
- Serve warm with ice cream or whipped cream.
- The sauce will thicken as it cools.
