Description

A simple recipe for cookies flavored like butterbeer, suitable for cozy moments.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon butter extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar (for dusting)
  • 1/4 cup heavy cream (for glaze)
  • 1 tablespoon butter (for glaze)
  • 1/2 teaspoon butter extract (for glaze)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and butter extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Roll the dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
  6. Bake for 9 to 11 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  7. To make the glaze, melt 1 tablespoon of butter in a small saucepan. Remove from heat and stir in the heavy cream and butter extract. Whisk until smooth.
  8. Once cookies are cool, drizzle the glaze lightly over the tops. Dust with powdered sugar before serving.

Notes

  • For a stronger butterscotch flavor, you can add 1/4 teaspoon of butterscotch extract to the cookie dough.
  • Store cooled cookies in an airtight container at room temperature for up to 4 days.
