Description
A simple recipe for cookies flavored like butterbeer, suitable for cozy moments.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 3/4 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon butter extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup powdered sugar (for dusting)
- 1/4 cup heavy cream (for glaze)
- 1 tablespoon butter (for glaze)
- 1/2 teaspoon butter extract (for glaze)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and butter extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
- Bake for 9 to 11 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- To make the glaze, melt 1 tablespoon of butter in a small saucepan. Remove from heat and stir in the heavy cream and butter extract. Whisk until smooth.
- Once cookies are cool, drizzle the glaze lightly over the tops. Dust with powdered sugar before serving.
Notes
- For a stronger butterscotch flavor, you can add 1/4 teaspoon of butterscotch extract to the cookie dough.
- Store cooled cookies in an airtight container at room temperature for up to 4 days.
