Description

A creamy, flavorful soup featuring chicken, gnocchi, and sun-dried tomatoes in a rich sauce.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1/2 cup heavy cream
  • 1 (16 ounce) package potato gnocchi
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken pieces and cook until browned on all sides and cooked through. Remove chicken and set aside.
  3. Add onion to the pot and cook until softened, about 5 minutes.
  4. Add garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
  5. Pour in chicken broth and add diced tomatoes and sun-dried tomatoes. Bring the mixture to a simmer.
  6. Stir in heavy cream and gnocchi. Cook according to gnocchi package directions, usually about 3-5 minutes, until the gnocchi float.
  7. Return the cooked chicken to the pot.
  8. Stir in fresh spinach until wilted.
  9. Remove from heat and stir in Parmesan cheese.

Notes

  • For a thicker soup, you can mash a few cooked gnocchi against the side of the pot before adding the cream.
  • You can substitute chicken thighs for chicken breasts if you prefer.
