A creamy, flavorful soup featuring chicken, gnocchi, and sun-dried tomatoes in a rich sauce.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
- 1/2 cup heavy cream
- 1 (16 ounce) package potato gnocchi
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken pieces and cook until browned on all sides and cooked through. Remove chicken and set aside.
- Add onion to the pot and cook until softened, about 5 minutes.
- Add garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in chicken broth and add diced tomatoes and sun-dried tomatoes. Bring the mixture to a simmer.
- Stir in heavy cream and gnocchi. Cook according to gnocchi package directions, usually about 3-5 minutes, until the gnocchi float.
- Return the cooked chicken to the pot.
- Stir in fresh spinach until wilted.
- Remove from heat and stir in Parmesan cheese.
Notes
- For a thicker soup, you can mash a few cooked gnocchi against the side of the pot before adding the cream.
- You can substitute chicken thighs for chicken breasts if you prefer.
