Simple recipe for rich white chocolate truffles using mascarpone cheese.

- 8 ounces white chocolate, chopped
- 4 ounces mascarpone cheese, softened
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar, for rolling
Instructions
- Melt the white chocolate in a double boiler or microwave in short bursts, stirring until smooth. Let it cool slightly, about 5 minutes.
- In a medium bowl, beat the softened mascarpone cheese and vanilla extract until creamy.
- Gradually add the slightly cooled melted white chocolate to the mascarpone mixture. Mix until just combined and smooth. Do not overmix.
- Cover the bowl and refrigerate the mixture for at least 2 hours, or until firm enough to scoop.
- Place the powdered sugar in a shallow dish.
- Scoop the chilled mixture using a small spoon or melon baller and quickly roll it into small balls between your palms.
- Roll each truffle in the powdered sugar until fully coated.
- Store the finished truffles in an airtight container in the refrigerator.
Notes
- For a different coating, try rolling the truffles in finely chopped nuts or cocoa powder.
- If the mixture is too soft to roll, return it to the refrigerator for another 30 minutes.
