Simple recipe for small, bite-sized chocolate chip muffins.
Ingredients

- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
Instructions
- Preheat your oven to 400 degrees F (200 degrees C). Grease or line mini muffin pans.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the milk, oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
- Gently fold in the mini chocolate chips.
- Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
- Bake for 8 to 10 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer flavor, substitute buttermilk for regular milk.
- You can add a sprinkle of coarse sugar on top before baking for a slight crunch.
