Small, rich cheesecake bites with a graham cracker crust, mimicking classic New York style flavor.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat your oven to 325 degrees Fahrenheit. Line a standard 12-cup muffin tin with paper liners.
- Combine graham cracker crumbs and 1/4 cup sugar in a bowl. Pour in melted butter and mix until crumbs are evenly moistened.
- Press about 1 tablespoon of the crumb mixture firmly into the bottom of each muffin liner. Bake the crusts for 5 minutes. Remove from the oven and let cool slightly.
- In a separate large bowl, beat the softened cream cheese until smooth. Add 3/4 cup sugar, sour cream, and vanilla extract. Mix until just combined. Do not overmix.
- Beat in the eggs one at a time, mixing only until each egg is incorporated.
- Spoon the cream cheese mixture evenly over the crusts in the muffin tin, filling each liner about three-quarters full.
- Bake for 18 to 20 minutes, or until the edges are set and the centers are almost set (they will still jiggle slightly).
- Turn off the oven, prop the oven door open slightly, and let the cheesecakes cool in the oven for 30 minutes.
- Remove the cheesecakes from the oven and let them cool completely on a wire rack. Refrigerate for at least 4 hours, or preferably overnight, before serving.
Notes
- For a smoother texture, ensure your cream cheese and sour cream are fully at room temperature before mixing.
- If you prefer a tangier flavor, substitute plain Greek yogurt for the sour cream.
