Instructions
- In a medium bowl, combine rolled oats, peanut butter, honey or maple syrup, and vanilla extract.
- Mix until all ingredients are well combined and form a thick mixture.
- If using, fold in the chocolate chips.
- Press the mixture firmly into a mini muffin tin lined with paper liners.
- Refrigerate for at least 30 minutes to allow the cups to set.
- Remove from the muffin tin and serve.
Notes
- Store leftover peanut butter oat cups in an airtight container in the refrigerator for up to one week.
