  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 500g cream cheese, softened
  • 150g caster sugar
  • 1 teaspoon vanilla extract
  • 300ml double cream
  • 400g mixed red berries (strawberries, raspberries, redcurrants)
  • 50g granulated sugar (for topping)
  • 1 tablespoon lemon juice

Instructions

  1. Crush the digestive biscuits into fine crumbs.
  2. Mix the biscuit crumbs with the melted butter until well combined.
  3. Press the mixture firmly into the base of a 20cm springform tin. Chill for 30 minutes.
  4. In a large bowl, beat the cream cheese, caster sugar, and vanilla extract until smooth.
  5. In a separate bowl, whip the double cream until soft peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture.
  7. Spoon the cheesecake filling over the biscuit base and smooth the top. Chill for at least 4 hours, or preferably overnight.
  8. In a saucepan, combine the mixed red berries, granulated sugar, and lemon juice.
  9. Cook over medium heat for 5-7 minutes, stirring occasionally, until the berries soften and release their juices.
  10. Let the red fruit topping cool completely.
  11. Once the cheesecake is set, carefully remove it from the tin.
  12. Pour the cooled red fruit topping over the cheesecake before serving.
