A simple recipe for classic chicken noodle soup that provides good nutrition.
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 8 cups chicken broth
- 2 cups cooked, shredded chicken breast
- 1 cup egg noodles
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until vegetables soften, about 5 to 7 minutes.
- Pour in chicken broth. Bring the mixture to a boil.
- Reduce heat and simmer for 10 minutes, or until carrots are tender.
- Add shredded chicken, egg noodles, thyme, and rosemary.
- Cook according to noodle package directions, usually 6 to 8 minutes, until noodles are done.
- Season with salt and pepper before serving.
Notes
- For richer flavor, use homemade chicken broth.
- You can substitute dried parsley for rosemary if desired.
- If you prefer softer vegetables, cook them longer before adding broth.
