- 1 cup peanut butter
- 1/2 cup honey
- 1/4 cup butter or margarine
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- 1 cup chocolate chips
Instructions
- Line an 8×8 inch pan with parchment paper.
- In a large microwave-safe bowl, combine peanut butter, honey, and butter.
- Microwave on high for 1-2 minutes, stirring every 30 seconds, until melted and smooth.
- Stir in vanilla extract.
- Add oats and stir until well combined.
- Fold in chocolate chips.
- Press mixture evenly into the prepared pan.
- Refrigerate for at least 1 hour, or until firm.
- Cut into bars before serving.
Notes
- You can substitute rolled oats for quick-cooking oats, but the texture will be different.
- Store bars in an airtight container in the refrigerator for up to a week.
- Add other desired mix-ins like nuts or dried fruit.
