Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a medium bowl, whisk the brown sugar, granulated sugar, and olive oil until combined.
- Beat in the egg and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the chocolate chips.
- Fold in the mini marshmallows gently.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Using a light-flavored olive oil will result in a more neutral cookie flavor.
- For chewier cookies, slightly underbake them.
- Store cooled cookies in an airtight container at room temperature.
