Description

A simple, one-pot pasta dish featuring a creamy pumpkin Alfredo sauce with Cajun seasoning.


Ingredients

  • 1 pound fettuccine pasta
  • 1 (15 ounce) can pumpkin puree (not pumpkin pie filling)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the fettuccine according to package directions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water.
  2. While the pasta cooks, heat the olive oil in a large pot or Dutch oven over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the pumpkin puree and Cajun seasoning. Cook for 2 minutes, stirring constantly.
  4. Pour in the chicken broth and heavy cream. Bring the mixture to a simmer, stirring occasionally.
  5. Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth.
  6. Add the drained pasta back into the pot with the sauce. Toss to coat everything evenly.
  7. If the sauce is too thick, add the reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
  8. Season with salt and pepper. Serve immediately.

  • You can add cooked, shredded chicken for a heartier meal.
