Description
A simple, one-pot meal featuring chicken and rice flavored with ranch seasoning.

- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (10.5 ounce) can cream of chicken soup
- 1 packet (1 ounce) dry ranch seasoning mix
- 2 cups chicken broth
- 1 cup uncooked long-grain white rice
- 1 cup frozen peas
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the chicken pieces and cook until lightly browned on all sides.
- Pour in the cream of chicken soup, ranch seasoning mix, and chicken broth. Stir well to combine.
- Add the uncooked rice to the pot and stir. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during simmering.
- Remove the pot from the heat. Stir in the frozen peas. Keep the pot covered for 5 minutes to allow the peas to heat through.
- Fluff the rice mixture with a fork before serving.
Notes
- For a richer flavor, you can use chicken thighs instead of breasts.
- If the rice seems too dry before 20 minutes, add a splash more broth or water.
