  • 2 medium yellow squash, sliced into 1/4-inch rounds
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 large egg, beaten
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine flour, salt, pepper, garlic powder, and paprika.
  3. In another shallow dish, beat the egg.
  4. In a third shallow dish, place the panko breadcrumbs.
  5. Dip each squash slice first in the flour mixture, then in the beaten egg, and finally coat thoroughly with panko breadcrumbs.
  6. Arrange coated squash slices in a single layer on the prepared baking sheet. Drizzle with olive oil.
  7. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
