Ingredients

- 1 tablespoon vegan butter, melted
Instructions
- Combine 1 cup rolled oats, water or plant milk, cinnamon, and maple syrup in a saucepan.
- Bring the mixture to a boil, then reduce heat and simmer for 5 to 7 minutes, stirring occasionally, until the oatmeal is thick.
- While the oatmeal cooks, prepare the crisp topping: In a small bowl, mix the 1/4 cup rolled oats, chopped nuts, brown sugar, and melted vegan butter until crumbly.
- Divide the cooked oatmeal into two bowls.
- Top each serving with half of the diced peaches.
- Sprinkle the crisp topping evenly over the peaches.
- Serve immediately.

- Use any plant milk you prefer, such as almond or soy milk.
- For a softer peach topping, you can briefly sauté the diced peaches in a small pan with a splash of water before serving.
