Description

  • 1 pound fresh okra, trimmed
  • 4 ounces pepper jack cheese, cut into 1/2-inch cubes
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup buttermilk
  • Vegetable oil for frying

Instructions

  1. Wash and thoroughly dry the okra. Carefully make a small slit lengthwise in each okra pod, without cutting all the way through.
  2. Gently insert a cube of pepper jack cheese into each okra pod.
  3. In a shallow dish, whisk together the flour, cornmeal, salt, black pepper, and cayenne pepper (if using).
  4. Pour the buttermilk into another shallow dish.
  5. Dip each cheese-stuffed okra pod into the buttermilk, allowing excess to drip off.
  6. Dredge the okra in the flour mixture, pressing gently to ensure it’s fully coated.
  7. Heat about 2-3 inches of vegetable oil in a large, heavy-bottomed pot or Dutch oven to 350°F (175°C).
  8. Carefully add the okra to the hot oil in batches, being careful not to overcrowd the pot.
  9. Fry for 3-5 minutes, or until the okra is golden brown and crispy.
  10. Remove the fried okra with a slotted spoon and place it on a paper towel-lined plate to drain excess oil.
  11. Serve hot.

  • Ensure the oil is at the correct temperature for crispy results.
