A rich, creamy cheesecake flavored with lemon and topped with fresh blueberries.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 4 large eggs
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Wrap the outside of a 9-inch springform pan tightly with heavy-duty aluminum foil.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared springform pan. Bake for 10 minutes. Remove from oven and let cool slightly.
- In a large bowl, beat the softened cream cheese until smooth. Gradually beat in 1 1/2 cups sugar and flour until combined. Mix in vanilla extract, lemon juice, and lemon zest.
- Beat in the eggs one at a time, mixing just until combined after each addition. Do not overmix.
- Pour the batter over the cooled crust. Sprinkle blueberries evenly over the top of the batter.
- Place the foil-wrapped springform pan into a larger roasting pan. Carefully pour hot water into the roasting pan until the water reaches halfway up the sides of the springform pan.
- Bake for 55 to 65 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven, prop the door open slightly, and let the cheesecake cool in the oven for 1 hour.
- Remove the cheesecake from the water bath and let it cool completely on a wire rack.
- Refrigerate for at least 6 hours, or preferably overnight, before serving.
Notes
- For the best texture, bring your cream cheese and eggs to room temperature before starting.
- Use fresh lemon juice for the strongest flavor.
- If you do not have fresh blueberries, frozen blueberries can be used, but do not thaw them first.
