A simple, bright lemon sheet cake mixed in one bowl, suitable for birthdays.

- 1 3/4 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice (for glaze)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the milk, oil, eggs, lemon zest, lemon juice, and vanilla extract to the dry ingredients.
- Mix with a whisk until just combined. Do not overmix the batter.
- Pour the batter into the prepared baking pan.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan.
- For the glaze, whisk together the powdered sugar and 2 tablespoons of lemon juice until smooth.
- Drizzle the glaze over the cooled cake before serving.
Notes
- For a stronger lemon flavor, increase the lemon zest to 1 1/2 tablespoons.
- You can substitute buttermilk for whole milk for a slightly tangier cake.
