Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 3/4 cup fresh strawberries, chopped
  • 1/2 cup heavy cream, plus more for brushing
  • 1 large egg

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, oats, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the chopped strawberries.
  5. In a small bowl, whisk together the heavy cream and egg. Pour this mixture into the dry ingredients. Mix gently until just combined; do not overmix.
  6. Turn the dough out onto a lightly floured surface. Gently pat or roll the dough into a 3/4-inch thick circle or rectangle.
  7. Cut the dough into 8 wedges or use a round cutter. Place the scones on the prepared baking sheet.
  8. Brush the tops lightly with extra heavy cream.
  9. Bake for 15 to 18 minutes, or until the tops are golden brown.
  10. Cool on a wire rack before serving.

Notes

  • For a sweeter scone, you can sprinkle a little extra sugar on top before baking.
  • If your strawberries are very juicy, gently pat them dry before chopping.
