Description

Savory beef rolls filled with bacon and pickles, simmered in a rich mushroom sauce.


Ingredients

Scale
  • 1.5 lbs beef round, thinly sliced
  • 6 slices bacon
  • 6 dill pickles, quartered lengthwise
  • 1 large onion, sliced
  • 8 oz mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 2 tbsp oil
  • Salt and pepper to taste

Instructions

  1. Season beef slices with salt and pepper.
  2. Lay one slice of bacon and a pickle quarter on each beef slice.
  3. Roll up the beef and secure with toothpicks.
  4. Heat oil in a large pot over medium-high heat.
  5. Brown the beef rolls on all sides.
  6. Remove beef rolls from the pot.
  7. Add onion and mushrooms to the pot and cook until softened.
  8. Stir in flour and cook for 1 minute.
  9. Gradually whisk in beef broth, scraping up any browned bits.
  10. Return beef rolls to the pot.
  11. Bring to a simmer, then reduce heat and cover.
  12. Cook for 1.5 to 2 hours, or until beef is tender.
  13. Remove toothpicks before serving.

Notes

  • Serve with mashed potatoes or noodles.
  • The sauce can be thickened by mixing a little cornstarch with water and stirring into the simmering sauce.
