Description
Savory beef rolls filled with bacon and pickles, simmered in a rich mushroom sauce.
Ingredients

- 1.5 lbs beef round, thinly sliced
- 6 slices bacon
- 6 dill pickles, quartered lengthwise
- 1 large onion, sliced
- 8 oz mushrooms, sliced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 2 tbsp oil
- Salt and pepper to taste
Instructions
- Season beef slices with salt and pepper.
- Lay one slice of bacon and a pickle quarter on each beef slice.
- Roll up the beef and secure with toothpicks.
- Heat oil in a large pot over medium-high heat.
- Brown the beef rolls on all sides.
- Remove beef rolls from the pot.
- Add onion and mushrooms to the pot and cook until softened.
- Stir in flour and cook for 1 minute.
- Gradually whisk in beef broth, scraping up any browned bits.
- Return beef rolls to the pot.
- Bring to a simmer, then reduce heat and cover.
- Cook for 1.5 to 2 hours, or until beef is tender.
- Remove toothpicks before serving.
Notes
- Serve with mashed potatoes or noodles.
- The sauce can be thickened by mixing a little cornstarch with water and stirring into the simmering sauce.
