Description

Simple bars featuring a shortbread crust, apple filling, and a pomegranate topping.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 medium apples, peeled, cored, and diced
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1/2 cup pomegranate seeds (arils)
  • 1 large egg
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. For the crust, combine the flour, cold butter, granulated sugar, and salt in a bowl. Cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan. Bake for 15 minutes.
  4. While the crust bakes, prepare the filling. In a medium bowl, toss the diced apples with brown sugar, cinnamon, and lemon juice.
  5. Spread the apple mixture over the partially baked crust. Sprinkle the pomegranate seeds evenly over the apples.
  6. In a small bowl, whisk the egg and milk together. Drizzle this mixture over the pomegranate layer.
  7. Return the pan to the oven and bake for an additional 25 to 30 minutes, or until the topping is set and lightly golden.
  8. Let the bars cool completely in the pan before lifting out by the parchment paper and cutting into squares.

Notes

  • You can use store-bought pie crust mix for the base if you prefer a quicker method.
  • If you do not have fresh pomegranate seeds, you can substitute with 1/4 cup of dried cranberries mixed into the apple filling.
