- 3 lb pork loin roast
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Pat the pork loin dry with paper towels.
- In a small bowl, mix the salt, pepper, garlic powder, and rosemary.
- Rub the olive oil over the entire surface of the pork loin.
- Sprinkle the spice mixture evenly over the roast, pressing lightly so it adheres.
- Place the roast in a roasting pan.
- Roast for 15 minutes at 400 degrees Fahrenheit.
- Reduce the oven temperature to 350 degrees Fahrenheit and continue roasting until an internal temperature of 145 degrees Fahrenheit is reached, about 45 to 60 minutes more.
- Remove the roast from the oven and let it rest on a cutting board, loosely tented with foil, for 10 minutes before slicing.
Notes
- For easier cleanup, line your roasting pan with aluminum foil.
- If you prefer a crispier exterior, increase the initial roasting temperature to 425 degrees Fahrenheit for 20 minutes.
