Ingredients

Scale
  • 1/2 cup rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup pumpkin puree
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup or sweetener
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of salt
  • Optional topping: 1 tablespoon chopped pecans

Instructions

  1. In a jar or container, combine the rolled oats, milk, pumpkin puree, chia seeds, maple syrup, pumpkin pie spice, and salt.
  2. Stir all ingredients well until fully mixed.
  3. Cover the container and place it in the refrigerator for at least 4 hours, or preferably overnight.
  4. In the morning, stir the oats again. If the mixture is too thick, add a splash more milk.
  5. Add optional toppings like pecans before serving cold.

Notes

  • You can adjust the amount of maple syrup to your preferred sweetness level.
  • Use canned pumpkin puree, not pumpkin pie filling.
