- 1 (15 ounce) can chickpeas, rinsed and drained
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh cilantro, chopped
- 1/4 cup onion, chopped
- 2 cloves garlic
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons all-purpose flour
- Vegetable oil, for frying
Instructions
- Combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne pepper, salt, and black pepper in a food processor. Pulse until the mixture is coarsely ground but not smooth.
- Transfer the mixture to a bowl and stir in the flour until just combined.
- Shape the mixture into small patties, about 1 inch in diameter.
- Heat about 1 inch of vegetable oil in a deep skillet over medium-high heat to 350 degrees F (175 degrees C).
- Carefully place falafel patties into the hot oil, working in batches. Do not overcrowd the pan.
- Fry for 3 to 4 minutes per side, until golden brown and crispy.
- Remove falafel with a slotted spoon and drain on paper towels.
Notes
- For best results, chill the mixture for 15 minutes before shaping.
- Serve hot with tahini sauce or in pita bread.
