Ingredients

- 1 head romaine lettuce, chopped
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 large tomato, diced
- 1/2 red onion, thinly sliced
- 1/2 cup chopped cilantro
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place the chopped romaine lettuce in a large bowl.
- Add the black beans, corn, diced tomato, sliced red onion, and cilantro to the bowl.
- In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper to make the dressing.
- Pour the dressing over the salad ingredients.
- Toss gently until everything is well combined.
- Serve immediately.
Notes
- For extra flavor, add 1/2 cup crumbled cotija cheese before serving.
- If using frozen corn, thaw it slightly before adding to the salad.
