Description

A cool, tangy sorbet combining the flavors of margarita with a hint of pickle brine and fresh lime zest.


Ingredients

  • 1 cup pickle juice (from dill pickles)
  • 1 cup water
  • 3/4 cup granulated sugar
  • 1/2 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/4 cup tequila (optional)

Instructions

  1. Combine pickle juice, water, and sugar in a saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Do not boil.
  2. Remove the mixture from the heat and let it cool to room temperature.
  3. Stir in the fresh lime juice, lime zest, and tequila (if using).
  4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s directions until it reaches a firm, sorbet consistency.
  5. Transfer the sorbet to an airtight container and freeze for at least 4 hours before serving.

Notes

  • For a non-alcoholic version, omit the tequila.
  • If you do not have an ice cream maker, freeze the mixture in a shallow pan, stirring vigorously every 30 minutes for the first 3 hours to break up ice crystals.
