A cool, tangy sorbet combining the flavors of margarita with a hint of pickle brine and fresh lime zest.
Ingredients

- 1 cup pickle juice (from dill pickles)
- 1 cup water
- 3/4 cup granulated sugar
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 1/4 cup tequila (optional)
Instructions
- Combine pickle juice, water, and sugar in a saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Do not boil.
- Remove the mixture from the heat and let it cool to room temperature.
- Stir in the fresh lime juice, lime zest, and tequila (if using).
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s directions until it reaches a firm, sorbet consistency.
- Transfer the sorbet to an airtight container and freeze for at least 4 hours before serving.
Notes
- For a non-alcoholic version, omit the tequila.
- If you do not have an ice cream maker, freeze the mixture in a shallow pan, stirring vigorously every 30 minutes for the first 3 hours to break up ice crystals.
