Description

A comforting and flavorful soup made with leftover rotisserie chicken and mushrooms.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 8 ounces mushrooms, sliced
  • 4 cups chicken broth
  • 2 cups shredded rotisserie chicken
  • 1/2 cup heavy cream (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  3. Add mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes.
  4. Pour in chicken broth and bring to a simmer.
  5. Add shredded chicken and heat through.
  6. Stir in heavy cream if desired.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • You can use any type of mushrooms you prefer.
  • Add other vegetables like peas or corn.
  • Thicken the soup by adding a cornstarch slurry.
