Description
A comforting and flavorful soup made with leftover rotisserie chicken and mushrooms.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 8 ounces mushrooms, sliced
- 4 cups chicken broth
- 2 cups shredded rotisserie chicken
- 1/2 cup heavy cream (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Add mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes.
- Pour in chicken broth and bring to a simmer.
- Add shredded chicken and heat through.
- Stir in heavy cream if desired.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- You can use any type of mushrooms you prefer.
- Add other vegetables like peas or corn.
- Thicken the soup by adding a cornstarch slurry.
