Simple recipe for chewy, gluten-free cookies featuring salted peanut butter.

- 1 cup peanut butter (smooth or crunchy)
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt (optional, if using unsalted peanut butter)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, mix the peanut butter, sugar, egg, and vanilla extract until just combined.
- Stir in the baking soda and salt, if using. Do not overmix.
- Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
- Use a fork to press down on each ball, creating a crisscross pattern.
- Bake for 10 to 12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra saltiness, sprinkle a few flakes of sea salt on top of the cookies immediately after taking them out of the oven.
- If your peanut butter is very stiff, you can microwave the mixture for 15 seconds to make mixing easier.
