- 2 lbs Yukon Gold potatoes, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 packet (1 oz) ranch seasoning mix
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 lb smoked sausage, sliced into 1/2-inch rounds
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 2 tbsp cream cheese, softened
- 2 tbsp chopped fresh parsley, for garnish
Instructions
- Preheat oven to 400Β°F (200Β°C).
- In a large bowl, toss the cubed potatoes with olive oil, ranch seasoning mix, garlic powder, and black pepper until evenly coated.
- Spread the seasoned potatoes in a single layer on a large baking sheet. Roast for 20-25 minutes, or until tender and lightly browned.
- While the potatoes roast, heat a large oven-safe skillet over medium heat. Add the sliced smoked sausage and cook for 5-7 minutes, or until browned and slightly crispy. Remove the sausage from the skillet and set aside.
- In the same skillet, whisk together the milk and softened cream cheese until smooth. Stir in 3/4 cup of the shredded cheddar cheese until melted and a creamy sauce forms.
- Add the roasted potatoes and cooked sausage to the skillet with the cheese sauce. Toss gently to combine.
- Sprinkle the remaining 1/4 cup of cheddar cheese over the top of the skillet bake.
- Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
Notes
- For extra spice, add a pinch of red pepper flakes to the potatoes before roasting.
- You can substitute other types of potatoes, such as red potatoes or russet potatoes.
- Any type of smoked sausage works well in this recipe, such as kielbasa or andouille.
