  • 2 lbs Yukon Gold potatoes, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 lb smoked sausage, sliced into 1/2-inch rounds
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 2 tbsp cream cheese, softened
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 400Β°F (200Β°C).
  2. In a large bowl, toss the cubed potatoes with olive oil, ranch seasoning mix, garlic powder, and black pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet. Roast for 20-25 minutes, or until tender and lightly browned.
  4. While the potatoes roast, heat a large oven-safe skillet over medium heat. Add the sliced smoked sausage and cook for 5-7 minutes, or until browned and slightly crispy. Remove the sausage from the skillet and set aside.
  5. In the same skillet, whisk together the milk and softened cream cheese until smooth. Stir in 3/4 cup of the shredded cheddar cheese until melted and a creamy sauce forms.
  6. Add the roasted potatoes and cooked sausage to the skillet with the cheese sauce. Toss gently to combine.
  7. Sprinkle the remaining 1/4 cup of cheddar cheese over the top of the skillet bake.
  8. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh parsley before serving.
