Description

A simple, satisfying ground beef casserole cooked in one pot.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup beef broth
  • 1 cup elbow macaroni
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Brown the ground beef and onion in a large pot over medium heat. Drain any excess fat.
  2. Add the diced tomatoes, kidney beans, beef broth, salt, and pepper to the pot. Bring the mixture to a boil.
  3. Stir in the elbow macaroni.
  4. Reduce heat to low, cover the pot, and simmer for 15 to 20 minutes, or until the macaroni is tender. Stir occasionally to prevent sticking.
  5. Remove from heat. If using, sprinkle the cheddar cheese over the top and cover until the cheese melts.

Notes

  • You can substitute kidney beans with pinto beans or black beans.
  • For extra flavor, add 1 teaspoon of Worcestershire sauce with the broth.
