Ingredients

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup pumpkin puree (not pie filling)
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 teaspoon dried sage
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a bowl, combine the ground turkey, breadcrumbs, egg, Parmesan cheese, salt, and pepper. Mix gently until just combined.
  3. Roll the mixture into small, uniform meatballs, about 1 inch in diameter.
  4. Place the meatballs on the prepared baking sheet and bake for 15 to 18 minutes, or until cooked through.
  5. While the meatballs bake, prepare the sauce. In a medium saucepan, combine the pumpkin puree, chicken broth, heavy cream, dried sage, and nutmeg.
  6. Heat the sauce over medium heat, stirring occasionally, until it simmers and thickens slightly, about 5 to 7 minutes. Do not boil.
  7. Once the meatballs are done, gently add them to the saucepan with the pumpkin sage sauce. Stir to coat.
  8. Heat for 2 more minutes until the meatballs are warmed through in the sauce.
  9. Serve immediately.

Notes

  • For extra flavor, you can brown the meatballs in olive oil before baking.
  • If you prefer a smoother sauce, strain it after simmering.
