Description
Scotcheroos are a classic no-bake dessert bar featuring a crispy peanut butter and butterscotch base topped with a luscious chocolate and butterscotch ganache. They are simple to make and a crowd-pleaser.

- 1 cup white sugar
- 1 cup light corn syrup
- 1 cup peanut butter
- 6 cups crispy rice cereal
- 1 cup chocolate chips
- 1 cup butterscotch chips
Instructions
- Combine sugar and corn syrup in a large saucepan. Bring to a rolling boil over medium heat, stirring constantly.
- Remove from heat. Stir in peanut butter until melted and smooth.
- Add crispy rice cereal to the peanut butter mixture. Stir until fully coated.
- Press the mixture evenly into a greased 9×13 inch baking pan.
- Melt chocolate chips and butterscotch chips together in a microwave-safe bowl or double boiler. Stir until smooth.
- Pour the melted chocolate and butterscotch mixture over the cereal base. Spread evenly.
- Refrigerate for at least 1 hour, or until firm, before cutting into squares.
Notes
- For easier cutting, line the baking pan with parchment paper before pressing the cereal mixture.
- If the chocolate topping is too thick, add a tiny bit of vegetable oil to thin it.
- Store Scotcheroos in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
