Description

Scotcheroos are a classic no-bake dessert bar featuring a crispy peanut butter and butterscotch base topped with a luscious chocolate and butterscotch ganache. They are simple to make and a crowd-pleaser.


Ingredients

  • 1 cup white sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 6 cups crispy rice cereal
  • 1 cup chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Combine sugar and corn syrup in a large saucepan. Bring to a rolling boil over medium heat, stirring constantly.
  2. Remove from heat. Stir in peanut butter until melted and smooth.
  3. Add crispy rice cereal to the peanut butter mixture. Stir until fully coated.
  4. Press the mixture evenly into a greased 9×13 inch baking pan.
  5. Melt chocolate chips and butterscotch chips together in a microwave-safe bowl or double boiler. Stir until smooth.
  6. Pour the melted chocolate and butterscotch mixture over the cereal base. Spread evenly.
  7. Refrigerate for at least 1 hour, or until firm, before cutting into squares.

Notes

  • For easier cutting, line the baking pan with parchment paper before pressing the cereal mixture.
  • If the chocolate topping is too thick, add a tiny bit of vegetable oil to thin it.
  • Store Scotcheroos in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
