Description
A rich and creamy seafood bisque featuring tender crab, shrimp, and lobster.
Ingredients

- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 2 cloves garlic, minced
- 1/4 cup brandy (optional)
- 4 cups seafood or fish stock
- 1 cup heavy cream
- 1/2 pound cooked crab meat
- 1/2 pound cooked shrimp, peeled and deveined
- 1/2 pound cooked lobster meat, chopped
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrots. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- If using brandy, carefully add it to the pot and let it bubble for 1-2 minutes, scraping up any browned bits from the bottom.
- Pour in the seafood stock and bring to a simmer. Reduce heat and let it simmer gently for 15 minutes to meld flavors.
- Stir in the heavy cream.
- Add the crab meat, shrimp, and lobster meat to the pot. Heat through gently, but do not boil.
- Stir in fresh parsley. Season with salt and pepper to taste.
- Serve hot.
Notes
- For a smoother bisque, you can blend the soup with an immersion blender before adding the seafood.
- Garnish with extra parsley or a drizzle of cream.
- Adjust seasoning as needed.
