Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 2 cloves garlic, minced
  • 1/4 cup brandy (optional)
  • 4 cups seafood or fish stock
  • 1 cup heavy cream
  • 1/2 pound cooked crab meat
  • 1/2 pound cooked shrimp, peeled and deveined
  • 1/2 pound cooked lobster meat, chopped
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrots. Cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. If using brandy, carefully add it to the pot and let it bubble for 1-2 minutes, scraping up any browned bits from the bottom.
  4. Pour in the seafood stock and bring to a simmer. Reduce heat and let it simmer gently for 15 minutes to meld flavors.
  5. Stir in the heavy cream.
  6. Add the crab meat, shrimp, and lobster meat to the pot. Heat through gently, but do not boil.
  7. Stir in fresh parsley. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • For a smoother bisque, you can blend the soup with an immersion blender before adding the seafood.
  • Garnish with extra parsley or a drizzle of cream.
