Description

Simple foil packets containing shrimp and broccoli rice cooked together for an easy meal.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 cups broccoli rice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 lemon, sliced

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Tear off four large pieces of heavy-duty aluminum foil, about 18 inches long.
  3. In a bowl, toss the shrimp with olive oil, garlic powder, oregano, salt, and pepper.
  4. Divide the broccoli rice evenly among the four foil pieces, placing it in the center of each.
  5. Top the broccoli rice with the seasoned shrimp.
  6. Place two lemon slices on top of the shrimp in each packet.
  7. Fold the foil over the ingredients and crimp the edges tightly to seal the packets completely.
  8. Place the sealed packets on a baking sheet.
  9. Bake for 12 to 15 minutes, or until the shrimp is pink and cooked through.
  10. Carefully open the packets (steam will escape) and serve immediately.

Notes

  • You can substitute cauliflower rice for broccoli rice if desired.
  • For extra flavor, add a teaspoon of lemon juice inside each packet before sealing.
