Description

A quick and flavorful one-pan meal featuring apple chicken sausage and mixed vegetables.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound apple chicken sausage, sliced into rounds
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup broccoli florets
  • 1 cup sliced zucchini
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sausage slices and cook until browned on both sides, about 5-7 minutes. Remove sausage from the skillet and set aside.
  3. Add onion and garlic to the same skillet. Cook until softened, about 3 minutes.
  4. Add red pepper, green pepper, and broccoli florets to the skillet. Cook for 5 minutes, stirring occasionally.
  5. Add zucchini, thyme, and black pepper. Cook for another 3-4 minutes until vegetables are tender-crisp.
  6. Return the cooked sausage to the skillet. Stir to combine and heat through, about 1 minute.
  7. Taste and add salt if needed before serving.

Notes

  • You can substitute sweet potatoes or carrots for some of the other vegetables.
  • Serve this skillet over rice or quinoa for a complete meal.
