A quick and flavorful one-pan meal featuring apple chicken sausage and mixed vegetables.
Ingredients

- 1 tablespoon olive oil
- 1 pound apple chicken sausage, sliced into rounds
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup broccoli florets
- 1 cup sliced zucchini
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- Salt to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the sausage slices and cook until browned on both sides, about 5-7 minutes. Remove sausage from the skillet and set aside.
- Add onion and garlic to the same skillet. Cook until softened, about 3 minutes.
- Add red pepper, green pepper, and broccoli florets to the skillet. Cook for 5 minutes, stirring occasionally.
- Add zucchini, thyme, and black pepper. Cook for another 3-4 minutes until vegetables are tender-crisp.
- Return the cooked sausage to the skillet. Stir to combine and heat through, about 1 minute.
- Taste and add salt if needed before serving.
Notes
- You can substitute sweet potatoes or carrots for some of the other vegetables.
- Serve this skillet over rice or quinoa for a complete meal.
