A comforting and easy slow cooker beef stroganoff recipe.
Ingredients

- 2 pounds beef stew meat
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 8 ounces mushrooms, sliced
- 1/2 cup sour cream
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Toss beef with flour, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Brown beef in batches.
- Add beef to the slow cooker.
- Add onion and garlic to the skillet and cook until softened.

- Pour in beef broth and Worcestershire sauce. Add thyme.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until beef is tender.
- Add mushrooms to the slow cooker during the last 30 minutes of cooking.
- Stir in sour cream before serving.
- Garnish with fresh parsley, if desired.
Notes
- You can use sirloin steak instead of stew meat.
- Adjust salt and pepper to your taste.
- Serve over egg noodles, rice, or mashed potatoes.
