Description

Tender chicken in a rich and creamy tomato-based sauce, made easy in your slow cooker.


Ingredients

  • 1.5 kg boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1 (400g) can crushed tomatoes
  • 1 cup plain yogurt
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Place the chicken pieces in the slow cooker.
  2. Add the chopped onion, minced garlic, grated ginger, crushed tomatoes, yogurt, heavy cream, and butter to the slow cooker.
  3. Stir in the garam masala, cumin, coriander, turmeric, and cayenne pepper (if using).
  4. Season with salt and pepper.
  5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and cooked through.
  6. Stir well before serving.
  7. Garnish with fresh cilantro.
  8. Serve hot with rice or naan bread.

Notes

  • For a spicier dish, add more cayenne pepper.
  • You can use chicken breasts instead of thighs, but they may dry out if overcooked.
  • Leftovers can be stored in the refrigerator for up to 3 days.
