- 1.5 lbs smoked sausage, cut into 1-inch pieces
- 4 cups green cabbage, chopped
- 1.5 lbs small red potatoes, quartered
- 1 large onion, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 0.5 teaspoon black pepper
- 0.5 teaspoon salt
Instructions
- Combine sausage, cabbage, potatoes, onion, diced tomatoes, chicken broth, thyme, pepper, and salt in a 6-quart slow cooker.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until potatoes and cabbage are tender.
- Stir before serving.
Notes
- For a spicier dish, use spicy smoked sausage or add a pinch of red pepper flakes.
- You can add other vegetables like carrots or bell peppers.
