Description
A quick and flavorful meal featuring spicy Cajun seasoned shrimp served over a bed of kale and cauliflower rice.
Ingredients

- 1 lb large shrimp, peeled and deveined
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 small head cauliflower, riced
- 2 cups kale, chopped
- 1/2 cup chicken broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Toss the shrimp with Cajun seasoning in a bowl.
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
- Add onion to the same skillet and cook until softened, about 3 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Add cauliflower rice and chicken broth to the skillet. Stir well.
- Cook for 5-7 minutes, stirring occasionally, until the liquid evaporates and the rice is tender.
- Stir in the chopped kale, salt, and pepper. Cook until the kale wilts, about 2 minutes.
- Return the shrimp to the skillet and toss to combine and heat through.
- Serve immediately.
Notes
- Adjust the amount of Cajun seasoning to control the spice level.
- You can substitute pre-riced cauliflower to save preparation time.
