Description

A quick and flavorful meal featuring spicy Cajun seasoned shrimp served over a bed of kale and cauliflower rice.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 small head cauliflower, riced
  • 2 cups kale, chopped
  • 1/2 cup chicken broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Toss the shrimp with Cajun seasoning in a bowl.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
  4. Add onion to the same skillet and cook until softened, about 3 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Add cauliflower rice and chicken broth to the skillet. Stir well.
  7. Cook for 5-7 minutes, stirring occasionally, until the liquid evaporates and the rice is tender.
  8. Stir in the chopped kale, salt, and pepper. Cook until the kale wilts, about 2 minutes.
  9. Return the shrimp to the skillet and toss to combine and heat through.
  10. Serve immediately.

Notes

  • Adjust the amount of Cajun seasoning to control the spice level.
  • You can substitute pre-riced cauliflower to save preparation time.
