Description

A quick recipe for noodles tossed in a spicy peanut sauce.


Ingredients

  • 8 oz noodles (spaghetti or linguine)
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon chili garlic sauce (or more to taste)
  • 24 tablespoons hot water (for thinning)
  • Optional: Chopped scallions and crushed peanuts for garnish

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. While noodles cook, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, and chili garlic sauce in a medium bowl.
  3. Add hot water one tablespoon at a time, whisking until the sauce reaches your desired consistency.
  4. Add the drained noodles to the bowl with the sauce. Toss well to coat all the noodles evenly.
  5. Serve immediately, garnished with scallions and crushed peanuts if using.

Notes

  • You can adjust the amount of chili garlic sauce to control the heat level.
  • For a richer flavor, toast the sesame oil lightly before adding it to the sauce.
