Description
A quick recipe for noodles tossed in a spicy peanut sauce.
Ingredients

- 8 oz noodles (spaghetti or linguine)
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 teaspoon chili garlic sauce (or more to taste)
- 2–4 tablespoons hot water (for thinning)
- Optional: Chopped scallions and crushed peanuts for garnish
Instructions
- Cook noodles according to package directions. Drain and set aside.
- While noodles cook, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, and chili garlic sauce in a medium bowl.
- Add hot water one tablespoon at a time, whisking until the sauce reaches your desired consistency.
- Add the drained noodles to the bowl with the sauce. Toss well to coat all the noodles evenly.
- Serve immediately, garnished with scallions and crushed peanuts if using.
Notes
- You can adjust the amount of chili garlic sauce to control the heat level.
- For a richer flavor, toast the sesame oil lightly before adding it to the sauce.
- This sauce works well cold, making it suitable for meal prep.
