A light and comforting tart featuring a potato dough crust filled with spinach and cheese.
Ingredients

- 250g potatoes
- 100g flour
- 50g butter
- 1 egg
- Salt to taste
- Pepper to taste
- Nutmeg to taste
- 300g fresh spinach
- 1 onion
- 2 cloves garlic
- 150g ricotta cheese
- 100g grated Parmesan cheese
- 1 egg
- Salt to taste
- Pepper to taste
- Nutmeg to taste
Instructions
- Boil and mash the potatoes.
- Mix the mashed potatoes with flour, butter, egg, salt, pepper, and nutmeg to form a dough.
- Press the dough into a tart pan.
- Sauté the chopped onion and garlic in a pan.
- Add the spinach and cook until wilted.
- Let the spinach cool and squeeze out excess water.
- Mix the spinach with ricotta cheese, Parmesan cheese, egg, salt, pepper, and nutmeg.
- Pour the filling into the tart shell.
- Bake in a preheated oven at 180°C (350°F) for 30-40 minutes, or until golden brown.
Notes
- You can use frozen spinach, but make sure to thaw and drain it well.
- Feel free to add other vegetables like mushrooms or bell peppers to the filling.
- Serve the tart warm or at room temperature.
