Description
These healthy and flavorful spinach and lentil burgers are a perfect vegetarian alternative to traditional burgers. They are easy to make and packed with nutrients.

- 1 cup cooked green or brown lentils, drained
- 10 ounces fresh spinach, wilted and squeezed dry
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil, for cooking
- 4 whole wheat burger buns
- Toppings of your choice (lettuce, tomato, onion, pickles, etc.)
Instructions
- In a large bowl, mash the cooked lentils with a fork until mostly broken down but still some texture remains.
- Finely chop the wilted and squeezed dry spinach. Add it to the bowl with the mashed lentils.
- Add the breadcrumbs, chopped onion, minced garlic, egg, cumin, smoked paprika, salt, and pepper to the lentil and spinach mixture.
- Mix thoroughly until all ingredients are well combined.
- Divide the mixture into four equal portions and shape them into patties.
- Heat olive oil in a large non-stick skillet over medium heat.
- Carefully place the patties in the hot skillet and cook for 5-7 minutes per side, or until golden brown and heated through.
- Serve the burgers on whole wheat buns with your favorite toppings.
Notes
- You can prepare the patties ahead of time and refrigerate them for up to 24 hours.
- For a gluten-free option, use gluten-free breadcrumbs.
- Adjust the spices to your preference.
- These burgers can also be baked in the oven at 375°F (190°C) for 20-25 minutes, flipping halfway.
