Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • Cooked rice, for serving

Instructions

  1. In a small bowl, whisk together soy sauce, oyster sauce, and sesame oil.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add garlic and ginger and stir-fry for 30 seconds until fragrant.
  4. Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from skillet and set aside.
  5. Add asparagus and mushrooms to the skillet and stir-fry for 5-7 minutes until tender-crisp.
  6. Return shrimp to the skillet. Pour the sauce over the shrimp and vegetables.
  7. Toss everything together to coat and cook for another minute until heated through.
  8. Serve immediately over cooked rice.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the sauce.
  • Feel free to add other vegetables like bell peppers or broccoli.
