A quick and healthy stir-fry featuring succulent shrimp, crisp asparagus, and earthy mushrooms in a savory sauce.
Ingredients

- 1 lb shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- Cooked rice, for serving
Instructions
- In a small bowl, whisk together soy sauce, oyster sauce, and sesame oil.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add garlic and ginger and stir-fry for 30 seconds until fragrant.
- Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from skillet and set aside.
- Add asparagus and mushrooms to the skillet and stir-fry for 5-7 minutes until tender-crisp.
- Return shrimp to the skillet. Pour the sauce over the shrimp and vegetables.
- Toss everything together to coat and cook for another minute until heated through.
- Serve immediately over cooked rice.
Notes
- For extra flavor, add a pinch of red pepper flakes to the sauce.
- Feel free to add other vegetables like bell peppers or broccoli.
- Adjust soy sauce and oyster sauce amounts to your preference.
