Herb Roasted Chicken with Creamy White Wine Sauce

Description

A recipe for a whole roasted chicken seasoned with herbs, served with a rich, creamy white wine sauce.


Ingredients

  • 1 whole chicken (about 4 lbs)
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 shallot, minced
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Pat the chicken dry with paper towels.
  3. Rub the chicken all over with olive oil.
  4. Mix rosemary, thyme, salt, and pepper. Rub this mixture evenly over the chicken skin.
  5. Place the chicken in a roasting pan.
  6. Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) in the thickest part of the thigh.
  7. Remove the chicken from the pan and let it rest on a cutting board, loosely covered with foil.
  8. Place the roasting pan on the stovetop over medium heat.
  9. Add the minced shallot and cook for 2 minutes until softened.
  10. Add the minced garlic and cook for 1 minute more.
  11. Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half, about 5 minutes.
  12. Add the chicken broth and bring to a simmer. Cook for 5 minutes.
  13. Reduce the heat to low and stir in the heavy cream and butter until the sauce is smooth.
  14. Taste the sauce and adjust seasoning if needed.
  15. Carve the chicken and serve immediately with the creamy white wine sauce poured over the top.

Notes

  • For extra flavor, stuff the chicken cavity with lemon wedges and fresh herbs before roasting.
  • If you prefer a thicker sauce, simmer it longer until it coats the back of a spoon.
