  • 1 cup chopped pecans, divided
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and mashed sweet potato.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
  6. Stir in 1/2 cup of the chopped pecans.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. In a medium bowl, combine the remaining 1/2 cup flour, brown sugar, and granulated sugar for the streusel topping.
  9. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  10. Stir in the remaining 1/2 cup chopped pecans.
  11. Sprinkle the streusel topping evenly over the cake batter.
  12. Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  13. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
