A simple recipe for a baked casserole using cooked turkey legs and rice.

- 2 cups cooked, shredded turkey meat
- 2 cups cooked white rice
- 1 (10.5 ounce) can cream of mushroom soup
- 1/2 cup milk
- 1/2 cup chopped onion
- 1/2 cup frozen peas
- 1/2 cup shredded cheddar cheese
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Grease a 1.5-quart baking dish.
- In a large bowl, combine the shredded turkey, cooked rice, cream of mushroom soup, milk, chopped onion, frozen peas, and black pepper. Mix until everything is well combined.
- Spread the mixture evenly into the prepared baking dish.
- Bake for 25 minutes.
- Sprinkle the cheddar cheese over the top of the casserole.
- Return the dish to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Let the casserole rest for 5 minutes before serving.
Notes
- You can use any cooked rice you have on hand, such as leftover rice.
- If you do not have cream of mushroom soup, cream of chicken soup works as a substitute.
- For a richer flavor, use leftover turkey meat from a roasted turkey.
