  • 2 (15 ounce) cans butter beans, rinsed and drained
  • 2 tablespoons olive oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 2 cups fresh spinach

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the vegetable broth, heavy cream, Italian seasoning, and red pepper flakes. Bring the mixture to a simmer.
  5. Stir in the rinsed and drained butter beans. Cook for 5 minutes, stirring occasionally, allowing the sauce to thicken slightly.
  6. Stir in the Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper.
  7. Add the fresh spinach and cook until wilted, about 2 minutes.

Notes

  • For a richer flavor, use chicken broth instead of vegetable broth.
  • If you do not have fresh spinach, use 1/2 cup frozen spinach, thawed and squeezed dry.
  • You can substitute cannellini beans for butter beans.
